Tomatillo Salsa Verde

Go green! This is the perfect salsa for breakfast burritos, enchiladas, and fish tacos. 

10 tomatillos, husks removed 

1/2 white onion, chopped

4 cloves garlic

1/2 cup cilantro leaves

1 Tbsp fresh lime juice

2 jalapeños or serrano peppers, stemmed/seeded and chopped 

½ tsp ground cumin 

Salt to taste

-Place tomatillos, onion, and garlic into a saucepan over medium heat. 

-Add cilantro, cumin, and salt.

-Pour in water and bring to a boil over high heat. 

-Reduce heat to medium-low, and simmer until the tomatillos are soft, about 10-15 minutes.-Add mixture to blender and puree until smooth. You may need to do this step in batches. 

-Season with salt to taste.

-Cool in the fridge before serving.
