Thai Cucumber Salad

Bold, crunchy, light, and SO easy to make!

4 large cucumbers (I used 8 baby cucumbers), cut lengthwise into thin spears, then cut crosswise into 2-inch pieces

1/4 cup roasted peanuts, chopped

1/4 cup cilantro, chopped

1 tsp red-pepper flakes, more to taste 

3 Tbsp creamy peanut butter

2 Tbsp soy sauce or coconut aminos

2 Tbsp rice vinegar

1 lime, juiced 

1 tsp sesame oil 

1 clove garlic, minced  

Salt to taste 


-In a large bowl, mix the cucumbers, red-pepper flakes, and a pinch of salt.

-In a separate bowl, mix the peanut butter, soy sauce, lime juice, rice vinegar, garlic, and sesame oil.

-Pour the sauce over the cucumber mixture and toss to coat. 

-Top with the peanuts and cilantro. Serve immediately and enjoy!
