Cucumber Sorbet with Mint and Basil

When life gives you cucumbers, make sorbet!

1 cup water

1/2 cup sugar

2 large cucumbers, peeled and sliced into large chunks

6 large fresh basil leaves

6 fresh mint leaves

1/4 cup fresh lime juice

1/2 tsp lime zest

2 Tbsp vodka or gin (optional: this helps the sorbet stay fluffy and not frozen hard, you won’t taste the booze.)

-In a small saucepan, bring half of the water (½ cup) and sugar to a boil. 

-Stir until sugar is dissolved. Remove from heat and allow to cool to room temp.

-In a blender, mix the cucumbers, lime juice and zest, basil, mint, vodka, and other ½ cup of water. Mix on high until well blended. 

-Add the sugar mixture to the blender with cucumber mixture and mix well again. 

-Pour contents of blender into a freezer safe bowl and freeze for about 30 minutes or about half frozen.

-Add sorbet back to blender and mix until ice is very fine. 

-Put back in bowl and freeze for another 30 minutes. Repeat blending and return to freezer until ready to serve. 

-Scoop into a bowl and dig in!

*Tip: Add a scoop to your favorite summer cocktail or prosecco for a boozie float.
