Chilled Cucumber Avocado Soup
2 avocados, halved and peeled, pit removed
2 green onions, chopped
2 large cucumbers, sliced (with or without skin, I did without)
1 cup plain yogurt
1 tsp dried dill
1 clove garlic
Juice of 1/2 a lime
Olive oil for drizzling
Salt to taste
-Add the cucumber, avocados, yogurt, green onions, garlic, dill, lime juice, and a pinch of salt to a blender or food processor. Add a small amount of water if too thick. Blend until smooth.
-Chill in fridge for at least an hour.
-Before serving, drizzle with olive oil and top with red onion, tomatoes, or any veggies/herbs of your choice.
