Baked Spaghetti Stuffed Peppers

A different take on classic stuffed peppers. The perfect use for your leftover spaghetti!

A different take on classic stuffed peppers. The perfect use for your leftover spaghetti!

6 bell peppers (any color), top cut off and ribs removed 

1 box (16 oz) spaghetti, cooked according to box directions 

1 pound ground beef, or meat of choice 

2 cups pasta sauce of choice 

2 shallots, minced 

5 cloves garlic, minced 

1 cup mozzarella cheese, shredded

1 cup parmesan cheese, shredded 

2 Tbsp olive oil 

Fresh basil or parsley, for garnish 

Salt and pepper to taste 

*If you have leftover spaghetti already made, use that! 


-Preheat oven to 350 degrees F. 

-In a small pan, heat olive oil over medium heat. 

-Add ground beef (or meat of choice), shallots, and garlic. 

-Cook until beef is cooked through. 

-In a large bowl, mix cooked spaghetti, pasta sauce, and ground beef mixture. 

-Salt and pepper to taste. 

-Add peppers to a greased casserole dish, standing upright. 

-Fill each pepper to the top with the spaghetti mixture and drizzle with olive oil. 

-Cover with foil and bake for 30 minutes. 

-Remove from oven. Remove foil, and top evenly with mozzarella and parmesan cheese.

-Return to oven and bake uncovered for 15 minutes more, or until cheese is melted. 

-Remove from oven, top with fresh herbs, and serve.
